S’Mores Coffee Chocolate Cake Recipe

Ingredients:

Cake:

  • 1 box devil’s food chocolate cake mix
  • 1 cup strong brewed Lancaster County Coffee Roasters S’Mores Coffee (room temperature)

Marshmallow Frosting:

  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 6 ounces jarred marshmallow fluff
  • 1 cup mini marshmallows (for garnish)

Instructions:

For the Cake:

  1. Brew the Coffee
    Brew Lancaster County Coffee Roasters S’Mores Coffee extra strong and allow it to cool to room temperature.
  2. Prepare the Cake Mix
    In a mixing bowl, prepare the boxed devil’s food cake mix according to the package instructions, but replace the water with the cooled S’Mores Coffee. The coffee enhances the chocolate flavor and adds a subtle s’mores richness.
  3. Bake the Cake
    Pour the batter into a greased or parchment-lined baking pan (follow the size and temperature guidelines on the box). Bake until a toothpick inserted in the center comes out clean.
  4. Cool Completely
    Allow the cake to cool completely in the pan before frosting to prevent the frosting from melting.

For the Marshmallow Frosting:

  1. Cream the Butter
    In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
  2. Add Powdered Sugar
    Gradually add the powdered sugar, mixing until the frosting is smooth and creamy.
  3. Stir in Marshmallow Fluff
    Gently fold in the jarred marshmallow fluff until fully combined. The result should be light, fluffy, and perfect for spreading. 

Assemble the Cake:

  1. Frost the Cake
    Using a spatula, generously frost the completely cooled cake with the marshmallow frosting.
  2. Garnish
