Step 1
PREPARATION
Start by giving your filter a quick rinse with boiling water (this warms everything up and gets rid of any papery taste.) Discard that water, then set the now wet filter back in place.
If you are grinding whole bean coffee, grind to a fine grind (about the consistency of sand.) This is commonly called a "drip grind."
Fill kettle and heat water to boil.

Fill your empty mug with boiling water to preheat it.

Step 2
WEIGH & GRIND
Place your carafe on a digital scale, and use the tare function to reset.
Weigh out the ground coffee based on number of servings.
- When it comes to pour over coffee, we like to use a 1:15 ratio of coffee to water. Weigh out 23 grams of finely ground coffee to 340 grams of water.

Step 3
BREW

Place coffee in filter, and cover with enough water to just saturate coffee.

Let it rest for 30 seconds. This is called "blooming" the coffee. This process expands the ground coffee, ensuring even water dispersion and a fuller coffee flavor.
Once the bloom is complete, pouring slowly in concentric circles, add enough water to raise slurry about halfway up the cone. -
Use a spoon to push down any floating coffee grounds, then continue adding water slowly in stages, keeping the slurry at least halfway up the cone.
Keep an eye on the scale, and stop at 340 grams of water.
Take your time, (but not too much!) Aim to finish your pour in about 3 minutes. Keep your pour centered, and don’t be afraid to let the slurry rise

Step 4
ENJOY
Carefully remove the filter.
Swirl the carafe to incorporate all coffee evenly.
Discard the hot water that's been keeping your mug warm, and replace it with perfectly brewed coffee.
